This November, renowned Executive Chef Stephen Fraser, who heads up the iconic Lanzerac kitchen, will be hosting the next Summer Masterclass. Lanzerac has partnered with an impressive list of influential collaborators to present a six-part Summer Masterclass series, offering the public a chance to attend these interesting, insightful and collaborative classes while working alongside well-known masters of the industry in various creative fields and disciplines.

The first masterclass took place in October and was a rousing success, with floral design extraordinaire and owner of Fleur Le Cordeur, Heike Hayward inspiring and guiding attendees to create a stunning floral table accessory, perfect for summer dining events at home.

The art of dining the Lanzerac way 

Hailing from Wales, Lanzeracs Executive Chef Stephen Fraser has made South Africa his home for the past 16 years. After making the move to South Africa, Fraser trained under one of the country’s best-known chefs, David Higgs, and has become an esteemed member of the South African Chef’s Association.

During the hands-on Masterclass, guests will be shown how to prepare the perfect holiday feast the Lanzerac way. Each attendee will be given the opportunity to get involved with different elements of the meal preparation while cooking alongside the chef.

Says Fraser, “The main focus of the Masterclass is to show guests simple ways to elevate their home dinner parties over the festive season, from delicious canapés on arrival to decadent desserts that will leave your friends and family in awe. Guests will not only spend the day with me but receive a recipe pack, tasters, and a two-course lunch paired with wines.”

Fraser adds that the Masterclass will be beneficial to anyone wanting to learn to cook the Lanzerac way, from the novice to the more experienced. “There are a few challenging ingredients and cooking techniques that I will be guiding guests through; things that they would normally avoid doing or trying, so I aim to change their mindsets here. The recipes we will be cooking up are those my team use in the kitchen, so this is a great opportunity for guests to learn how to bring restaurant-quality dishes to their own dining table.

A self-professed adventurer, Fraser draws inspiration for his fare from his travels locally and abroad and describes his culinary style as simple yet refined, letting local and seasonal ingredients hero his dishes.

He says, “When I was asked to prepare a menu to use during the Masterclass, my first thoughts were of dishes that got me excited and eager to learn when I was just starting out in the kitchen. I have integrated a few of these items into the menu with the hope that it will ignite the same passion for food among the attendees as it did for me.”
