In the mood for some meatballs? Then give today’s recipe a go – Clover Lamb Koftas. These Middle Eastern inspired kebabs are PACKED with flavour and is perfectly partnered with a zesty Clover Classic Yoghurt-Based sauce. Prepare this delicious meal at home with a recipe from Chef Stephen Fraser and Clover.
- 500g Lamb mince
- 1 Garlic clove, crushed
- ¼ Red onion, grated
- 1 tsp ground cumin
- ½ tsp Chilli flakes
- Clover olive pride oil
- Wooden skewers, soaked in water
Place the mince, cumin, garlic, onion, chilli flakes salt and pepper into a mixing bowl.
Take a handful of the mince, about ¼ Cup and tightly wrap the mince around a wooden skewer, forming a sausage shape. Repeat with the remaining mince mixture. Place them into the fridge to firm up for 30 minutes.
Preheat a skillet or griddle pan to medium-high heat, brush the koftas with a touch of pride and place them onto the pan to cook for 8-10 minutes until cooked through. Serve the lamb koftas with the dipping sauce.
Dipping sauce:
- ¾ Cup Clover Plain Classic Dairy-Based Snack
- The zest & juice lemon
- 1 tsp fresh mint, chopped
- Salt and pepper to taste
Place all the ingredients into a mixing bowl, season well and season to taste.
