- 1 kg mussels, opened
- 2 onions, peeled and finely chopped
- 1 handful thyme leaves
- 1 cup Lanzerac Chenin Blanc
- 2 cups cream
- 30 ml garlic butter
- 30ml olive oil
- Salt and pepper

Instructions
Fry the onion and thyme in the garlic butter and olive oil until soft and translucent. Add the wine and cook until it has been reduced by half. Add the cream and mussels and cook for 8 minutes. Serve with chips or fresh baguette.
